The Basics
The reason we believe so strongly in food as medicine, especially with regard to fruits and vegetables, is that plants contain phytochemicals to keep themselves healthy and strong. These same protective benefits may translate to our own bodies and help us ward off disease and lead a healthier life.
Phytochemicals:
These compounds in plants impart flavors and scents and fight off bugs, solar radiation, and troublesome microbes. These abilities translate to disease-fighting properties in the human body through antioxidant power, anti-inflammatory strength, and detoxification boosting. The process is complex, and identifying a particular phytochemical's strengths does not mean isolating this phytochemical in a pill will have the same effect. Phytochemicals work together with each other and other plant components for effective protection. Some classes of phytochemicals include terpenes and terpenoids, polyphenolics, flavonoids (a smaller class of polyphenolics), indoles, saponins, lignans, and isothiocyanates.
Pigments:
Pigments are what give fruits and vegetables their color. They fall into two main classes: carotenoids, a subgroup of compounds called terpenes and terpenoids; and anthocyanins, a subgroup of phytochemicals called flavonoids (which is part of an even larger class called polyphenolics). Carotenoids are the yellow-orange-red pigments found in corn, tomatoes, and carrots. They are also abundant in leafy greens such as spinach, but they are masked by the intense green coloring of chlorophyll. Anthocyanins are the dark reds, blues, and purples found in cherries, plums, and blueberries.
Antioxidants:
While we need oxygen to live, the body's utilization of oxygen turns some of it into harmful free radicals (unstable oxygen molecules). Free radicals try to stabilize themselves by stealing extra electrons from other molecules. Left unchecked, this process can result in cancer, heart disease, and a host of other diseases. Although free radicals are a fact of life, antioxidants found in plants can help reduce oxidative stress and protect our bodies from the damaging effects.
